Yeast

Yeasts are single-celled microorganisms used in the production of all distilled alcohol beverage products. Used either on their own or in combination with other microorganisms, yeasts ferment a vast array of substrates to produce the alcohol and the flavor congeners that help to distinguish and differentiate all types of distilled alcohol beverages. Many strains of yeast are used by beverage distillers, and strains are selected on the basis of performance criteria including yeast lag time, fermentation speed, fermentation efficiency and congener/flavor formation. Performance criteria are driven by the distillery requirements and by the requirements of the beverage itself.

Lallemand Ethanol Technology produces a variety of yeast strains with proven track records for performance in different distilled beverage applications. We cater to those distillers looking to focus more on the production of their beverage spirits and less on the production of their yeast, and to do so in a cost-effective and convenient manner. In addition, we are able to propagate proprietary yeast strains for those distillers wanting the benefits of purchasing yeast, but still wanting to maintain their own in-house yeast strain. We will propagate their strain using our optimal growth conditions and provide it back to them in a format that works best for their operations.

Lallemand Ethanol Technology produces distillers yeast in various formats, including Instant Dry Yeast, Wet Cake Yeast, and Stabilized Liquid Yeast. Different formats cater to differing customer needs for convenience and cost-effectiveness in storage, handling and dosing.
