Lallemand

Lallemand Inc. is a privately held Canadian company specializing in the development, production, and marketing of yeasts and bacteria. The company has four major divisions: North American Bakers Yeast and Ingredients (based in Chicago, USA), European Yeast (based in Vienna, Austria), Specialty (based in Toulouse, France) and Lallemand South Africa (based in Johannesburg, RSA). Administrative offices for the parent company are in Montréal, Quebec, Canada.

North American Baker's Yeast and Ingredients Division operates through the subsidiaries Lallemand Distribution in Canada, American Yeast Sales in the U.S., and Lallemand Mexico in Mexico. It produces fresh, cream, and instant bakers yeast along with dough conditioners and baking powders. These products, along with a broad range of other baking ingredients, are marketed through its own sales and distribution organization.

The European Baker's Yeast Division offers various yeast types under renowned brand names via its production, drying and packaging plants in Germany, Austria, Estonia and Poland, and its distribution centers in Denmark, Lithuania and Poland.

The Specialty Division is a technically-driven business focusing on new applications in fermented foods and beverages and in human and animal nutrition. It operates worldwide through a network of subsidiaries, branch offices, and joint ventures. It is organized in Business Units, each dedicated to a field of industry: Fermented Beverages (Oenology, Brewing), Nutrition activities (human and animal), Ethanol Technology (fuel ethanol) and Specialty Baking Ingredients. The Division has sales offices in several countries and bacteria and ingredients plants in Canada, United States, United Kingdom and France.

The Lallemand South Africa Division, was created in 2006, with the acquisition of Rymco, a renowned local yeast producer. Its plants in Johannesburg and Cape Town produce baker's yeast as well as specialty yeasts.

Other activities and investments include:

• Bio Ingredients activity, managing the sales of yeast and yeast derivatives to various industries not supplied by the aforementioned divisions, and

• Participation of 50% in Macco Organics. Inc., which produces specialty salts of organic acids at its plant in Valleyfield, Canada and exports them throughout the world.
